Although my consuming habits have undoubtedly diversified since I've began consuming a vegan food regimen, there are two desserts that I have been unable to take pleasure in as a vegan: tiramisu (how to imitate the mascarpone cream?) and highland shortbread (rounds edged with coarse sugar). Coconut butter and mascarpone cheese make the filling delicate and creamy, and the dark chocolate outer shell is so wealthy and delicious. Not chocolate!
